Otafuku Brewing’s “Mycoprotein” : Next-Generation Protein in Shojin Cuisine at Enryakuji Temple

Mycoprotein manufactured by Otafuku Brewing was used in meals served at an event at Enryakuji Temple on Mount Hiei.

Mycoprotein is a general term for alternative proteins made from fungi. The company is working on a production method using protein extracted from rice and aims to achieve mass production. It says that “this new rice-derived protein can be offered as an allergen-free ingredient. It is rich in umami components, and we are also pursuing deliciousness as an alternative food.”

On this occasion, it was served as a small side dish in shojin cuisine during tours held at Enryakuji Temple, including sutra-copying experiences.
